
Recipe: Baked Cod with Sweet Potato and Spinach

This dish combines the protein richness of cod with the complex carbohydrates of sweet potatoes and the benefits of spinach. A balanced and nutritious option for a light yet satisfying dinner. 🐟🥔

Ingredients:
🔹 200g of soaked and shredded cod
🔹 1 medium sweet potato
🔹 1 handful of fresh spinach
🔹 1 tablespoon of olive oil
🔹 1 clove of minced garlic
🔹 Salt and pepper to taste
Preparation method:
1️⃣ Cook the sweet potato and cut into slices.
2️⃣ Sauté the garlic and spinach in a frying pan with a drizzle of olive oil until wilted.
3️⃣ On a baking tray, place the sweet potato slices and the cod on top.
4️⃣ Drizzle with olive oil and bake at 180°C for 15 minutes.
5️⃣ Before serving, add the sautéed spinach.
