
Recipe: Lentil Bowl with Grilled Chicken and Roasted Vegetables

This dish is an excellent choice for a nutritious, balanced, and protein-rich lunch. Lentils are an incredible source of plant-based protein and fiber, aiding digestion and satiety, while grilled chicken provides lean protein essential for muscle development. Ingredients:
- 100g grilled chicken breast (cut into strips)
- 80g cooked lentils
- 1/2 red pepper cut into strips
- 1/2 courgette cut into slices
- 1/2 sliced red onion
- 1 clove of minced garlic
- 1 teaspoon of olive oil
- 1 teaspoon lemon juice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped fresh coriander to finish
Preparation method:
- Preheat the oven to 200ºC.
- Place the peppers, zucchini, and onion on a baking sheet, season with half the olive oil, minced garlic, cumin, paprika, salt, and pepper. Mix well and bake for 20 minutes, or until golden brown.
- While the vegetables are roasting, grill the chicken breast in a nonstick frying pan, seasoning with salt, pepper and a little lemon juice.
- Heat the cooked lentils and mix with the roasted vegetables when they are ready.
- On a plate or bowl, arrange the lentils with the roasted vegetables, add the grilled chicken strips on top and finish with fresh coriander and a drizzle of olive oil.
- Serve hot and enjoy a balanced and tasty meal!
