Recipe: Lentil Bowl with Grilled Chicken and Roasted Vegetables

This dish is an excellent choice for a nutritious, balanced, and protein-rich lunch. Lentils are an incredible source of plant-based protein and fiber, aiding digestion and satiety, while grilled chicken provides lean protein essential for muscle development. Lentil Bowl with Grilled Chicken and Roasted Vegetables

Ingredients:

  • 100g grilled chicken breast (cut into strips)
  • 80g cooked lentils
  • 1/2 red pepper cut into strips
  • 1/2 courgette cut into slices
  • 1/2 sliced red onion
  • 1 clove of minced garlic
  • 1 teaspoon of olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh coriander to finish

Preparation method:

  1. Preheat the oven to 200ºC.
  2. Place the peppers, zucchini, and onion on a baking sheet, season with half the olive oil, minced garlic, cumin, paprika, salt, and pepper. Mix well and bake for 20 minutes, or until golden brown.
  3. While the vegetables are roasting, grill the chicken breast in a nonstick frying pan, seasoning with salt, pepper and a little lemon juice.
  4. Heat the cooked lentils and mix with the roasted vegetables when they are ready.
  5. On a plate or bowl, arrange the lentils with the roasted vegetables, add the grilled chicken strips on top and finish with fresh coriander and a drizzle of olive oil.
  6. Serve hot and enjoy a balanced and tasty meal!
