
Recipe: Egg White Omelette with Chicken and Sweet Potato

A nutritious, protein-rich option for a balanced lunch, ideal for those looking to stay full and boost muscle recovery.

Ingredients:
- 4 egg whites
- 100g shredded chicken breast
- 1 medium sweet potato, cooked and diced
- 1/2 chopped onion
- 1 clove of minced garlic
- 1 teaspoon of olive oil
- 1 handful of fresh spinach
- Salt and pepper to taste
- Oregano or other aromatic herbs to taste
Preparation method:
- Heat the olive oil in a nonstick frying pan over medium heat.
- Sauté the onion and garlic until golden.
- Add the shredded chicken and cook for 2-3 minutes.
- Add the sweet potato cubes and spinach, stirring until the spinach wilts slightly.
- Beat the egg whites with a pinch of salt and pepper and pour over the mixture in the pan.
- Cook over medium-low heat until the omelet is set. If necessary, carefully flip to brown the other side.
- Remove from heat, sprinkle with aromatic herbs and serve hot.
