Recipe: Egg White Omelette with Chicken and Sweet Potato

Ingredients:

  • 4 egg whites
  • 100g shredded chicken breast
  • 1 medium sweet potato, cooked and diced
  • 1/2 chopped onion
  • 1 clove of minced garlic
  • 1 teaspoon of olive oil
  • 1 handful of fresh spinach
  • Salt and pepper to taste
  • Oregano or other aromatic herbs to taste

Preparation method:

  1. Heat the olive oil in a nonstick frying pan over medium heat.
  2. Sauté the onion and garlic until golden.
  3. Add the shredded chicken and cook for 2-3 minutes.
  4. Add the sweet potato cubes and spinach, stirring until the spinach wilts slightly.
  5. Beat the egg whites with a pinch of salt and pepper and pour over the mixture in the pan.
  6. Cook over medium-low heat until the omelet is set. If necessary, carefully flip to brown the other side.
  7. Remove from heat, sprinkle with aromatic herbs and serve hot.
