Ingredients:
- 150g turkey breast
- 100g cooked lentils
- 1 cup fresh spinach
- 1/2 chopped onion
- 1 clove of minced garlic
- 1 tablespoon of olive oil
- Juice of half a lemon
- Salt and pepper to taste
- Spices to taste (paprika, cumin or thyme)
Preparation method:
- Season the turkey breast with salt, pepper, lemon juice, and spices to taste. Let marinate for 15 minutes.
- Heat half the olive oil in a skillet and grill the turkey breast for 4-5 minutes on each side, until golden brown and cooked through. Set aside.
- In the same frying pan, add the remaining olive oil and sauté the onion and garlic until golden.
- Add the cooked lentils and spinach. Cook for another 3-4 minutes, stirring well, until the spinach wilts. Adjust the seasoning.
- Serve the sliced turkey breast over the lentil and spinach mixture.
