Recipe: Chicken Meatballs with Cauliflower Puree and Sautéed Broccoli

Chicken meatballs

Ingredients:

For the meatballs:

  • 400g ground chicken breast
  • 1 egg
  • 2 tablespoons of oatmeal
  • 1 clove of minced garlic
  • 1/2 chopped onion
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste

For the cauliflower puree:

  • 1 small cauliflower
  • 1 tablespoon olive oil
  • 2 tablespoons of milk or unsweetened plant-based drink
  • Salt and pepper to taste

For the sautéed broccoli:

  • 1 cup of broccoli
  • 1 tablespoon olive oil
  • 1 clove of minced garlic
  • Salt and pepper to taste

Preparation Method:

  1. Prepare the meatballs:

    • Mix all the ingredients in a bowl until you get a smooth dough.
    • Shape into small meatballs and place on a baking tray lined with baking paper.
    • Bake in a preheated oven at 180ºC for about 20 minutes, turning halfway through.
  2. Making the cauliflower puree:

    • Cook the cauliflower in boiling water for about 10 minutes until soft.
    • Drain and blend with a food processor or blender, adding olive oil, milk, salt and pepper.
  3. Sauté the broccoli:

    • Heat the olive oil in a frying pan and sauté the chopped garlic.
    • Add the broccoli and sauté for 3-4 minutes, seasoning with salt and pepper.
  4. Serve:

    • Place the puree on the plate, arrange the meatballs on top and serve with the sautéed broccoli.

  • Carbohydrates: 30g
  • Fat: 15g
