
Recipe: Chicken Meatballs with Cauliflower Puree and Sautéed Broccoli

If you’re looking for a protein-rich, nutritious and tasty dinner, these chicken meatballs are the perfect choice! Combined with a creamy cauliflower puree and sautéed broccoli, this meal is light but satisfying, providing all the essential macronutrients for recovery and muscle building. Ingredients:
For the meatballs:
- 400g ground chicken breast
- 1 egg
- 2 tablespoons of oatmeal
- 1 clove of minced garlic
- 1/2 chopped onion
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper to taste
For the cauliflower puree:
- 1 small cauliflower
- 1 tablespoon olive oil
- 2 tablespoons of milk or unsweetened plant-based drink
- Salt and pepper to taste
For the sautéed broccoli:
- 1 cup of broccoli
- 1 tablespoon olive oil
- 1 clove of minced garlic
- Salt and pepper to taste
Preparation Method:

Prepare the meatballs:
- Mix all the ingredients in a bowl until you get a smooth dough.
- Shape into small meatballs and place on a baking tray lined with baking paper.
- Bake in a preheated oven at 180ºC for about 20 minutes, turning halfway through.

Making the cauliflower puree:
- Cook the cauliflower in boiling water for about 10 minutes until soft.
- Drain and blend with a food processor or blender, adding olive oil, milk, salt and pepper.

Sauté the broccoli:
- Heat the olive oil in a frying pan and sauté the chopped garlic.
- Add the broccoli and sauté for 3-4 minutes, seasoning with salt and pepper.

Serve:
- Place the puree on the plate, arrange the meatballs on top and serve with the sautéed broccoli.
