Chickpea Bowl with Chicken and Avocado

Ingredients:

  • 100g grilled and shredded chicken breast
  • 100g cooked chickpeas
  • 1/2 sliced avocado
  • 1/2 tomato cut into cubes
  • 1/4 sliced red onion
  • 1 teaspoon of olive oil
  • 1 teaspoon lemon juice
  • 1 pinch of cumin
  • Salt and pepper to taste
  • Chopped coriander to finish

Preparation method:

  1. In a large bowl, combine the chickpeas, shredded chicken, tomato, and red onion.
  2. Add the olive oil, lemon juice, cumin, salt, and pepper. Mix well to combine all the flavors.
  3. Arrange the avocado slices on top of the mixture.
  4. Finish with chopped coriander and serve chilled or at room temperature.
