
Recipe: Protein Egg White and Oat Muffins

Ingredients (for 6 muffins):
- 4 egg whites
- 50 g oat flour
- 30 g whey protein (vanilla or neutral flavor)
- 1 teaspoon baking powder
- 1 tablespoon of honey or sweetener to taste
- 100 ml of skimmed milk or plant-based drink
- 1 teaspoon vanilla essence
- 1 pinch of cinnamon (optional)
- 30 g chopped nuts (walnuts, almonds or hazelnuts)
Preparation method:
- Preheat the oven to 180°C and grease a muffin tin with coconut oil or use silicone moulds.
- In a bowl, beat the egg whites until they are slightly foamy.
- Add the oat flour, whey, yeast, honey, milk, vanilla essence and cinnamon. Mix well until you obtain a homogeneous dough.
- Wrap the dried fruit in the dough.
- Distribute the mixture between the molds and bake for 15 to 20 minutes, or until golden brown and pass the toothpick test.
- Let it cool before unmolding.

- Carbohydrates: 12g
- Fat: 3g
