Recipe: Protein Egg White and Oat Muffins

Protein egg white muffins

Ingredients (for 6 muffins):

  • 4 egg whites
  • 50 g oat flour
  • 30 g whey protein (vanilla or neutral flavor)
  • 1 teaspoon baking powder
  • 1 tablespoon of honey or sweetener to taste
  • 100 ml of skimmed milk or plant-based drink
  • 1 teaspoon vanilla essence
  • 1 pinch of cinnamon (optional)
  • 30 g chopped nuts (walnuts, almonds or hazelnuts)

Preparation method:

  1. Preheat the oven to 180°C and grease a muffin tin with coconut oil or use silicone moulds.
  2. In a bowl, beat the egg whites until they are slightly foamy.
  3. Add the oat flour, whey, yeast, honey, milk, vanilla essence and cinnamon. Mix well until you obtain a homogeneous dough.
  4. Wrap the dried fruit in the dough.
  5. Distribute the mixture between the molds and bake for 15 to 20 minutes, or until golden brown and pass the toothpick test.
  6. Let it cool before unmolding.

Macronutrients per cupcake (approximate):

  • Protein: 8g
  • Carbohydrates: 12g
  • Fat: 3g
