Chicken Salad with Quinoa and Avocado

This delicious chicken, quinoa and avocado salad is the perfect post-workout meal to fuel your muscles and restore your energy. Ingredients:

  • 1 grilled chicken breast
  • 1 cup cooked quinoa
  • 1 diced avocado
  • 1 cup halved cherry tomatoes
  • 1 cucumber, sliced
  • 1 handful of spinach
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation method:
