Protein Breakfast Recipe: Egg White Omelette with Spinach and Cottage Cheese

Ingredients:

  • 4 egg whites
  • 1 egg yolk (optional, for a richer flavor)
  • 1/2 cup fresh spinach
  • 1/4 cup cottage cheese
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs such as chives, parsley or basil for garnish

Preparation method:

  1. Prepare the Ingredients :

    • Wash the spinach and chop it coarsely.
    • Separate the egg whites from the yolks (you can add a yolk for more flavor and texture).
    • Season the egg whites with salt and pepper to taste.
  2. Cooking the Spinach :

    • In a non-stick skillet, heat the olive oil over medium heat.
    • Add the spinach and cook until wilted, approximately 2 minutes.
  3. Make the Omelette :

    • Pour the seasoned egg whites over the spinach in the pan.
    • Cook over low heat until the egg whites begin to set around the edges.
    • Carefully spread the cottage cheese over half of the omelet.
    • Fold the omelet in half and continue cooking until it is completely set but still moist in the center.
  4. Serve :

    • Transfer the omelet to a plate.
    • Garnish with fresh herbs if desired.
    • Serve immediately and enjoy!
